I’ve always been a huge fan of rainbow cake, I love the fact that it looks simple on the outside but outburst with colours when cut open. Baking has been my way to clear my mind, escape, finding calmness in all that is crazy of works and life. I’ve been baking a lot of cupcakes lately and they all turned out great so I decided to attempt the biggest cake I’ve ever made. It took me almost 3 hours to complete but the result is so rewarding.
I followed the recipe by CupcakeJemma on YouTube but I altered the recipe to make 5 layers instead of 6 because I’ve only got 5 baking trays that come in the same size. It’s quite a simple alteration, just divided each ingredient quantity by 6, then multiple by 5. I also changed the sugar quantity cause I prefer my cake less sweet than most recipe asks for, I found that changing the amount of sugar did not affect the cake so I believed it is okay to alter the amount sugar to your preference. Though I love how the cake turn out, I still really need to work on my icing skill, still need to practice to get that smooth icing layer.
