It’s Valentine’s Day so I decided to bake something and decorate it with Valentine’s theme. It’s a simple super recipe and you can easily whip up for party or gift for someone. Though this is with the Valentine’s theme, you can bake this for any occasion.
Batter
110g of butter 100g of caster sugar 150g of self-raising flour 3 eggs 1tsp of vanilla extract 3 tbsp of milk Fillings 300g of dark chocolate (better chopped) 100g of butter 250ml of whipped cream Frosting 300ml of whipped cream 8 tbsp of icing sugar |
Preheat oven at 175oC
For the batter 1. Mix butter and sugar, whisk until creamy. 2. Then add in eggs, one at a time, then pour in the the vanilla extract to mix. 3. Add in flour and milk, half at a time so you don’t over mix them. Prepare 12 cupcakes sheet in muffin tin, pour the batter in either using spoon or ice cream scooper (which I prefer using, it gives a perfect cupcake size). Pop in the preheat oven for about 10-12 minutes. Fillings 1. Put chopped chocolate, butter and whipped cream into bowl, place the bowl on a saucepan (ensures that the bowl will fit on the saucepan so there is enough room for water to boil underneath). 2. After all the ingredients melted, take out the bowl and let it cool before placing in the fridge for further 15 minutes. To decorate 1. Whisk up whip cream, simply whisk until you gain a soft peak consistency, adding icing sugar half-way through. 2. Using a cupcakes hole cutter to create a hole in the middle for filling. 3. Using spoon to pour the chocolate filling in the middle. 4. Put the whipped cream into a piping bag, remember to place the piping tip of your choice before pour in the whipped cream. I used a rose tip for piping, and to create the rose shaped cream, I started from the middle of the cupcake, and swirling outwards. |
