Pancakes brunch

It’s the weekend! I miss Sunday brunch a lot, I had a lot of them back when I lived in London. I have to be honest, it was a lot easier to enjoy good pancakes without having to make them. My friends and I usually visited a good cafe for an awesome brunch and chat away about our week. Brunch is not so much a culture here in Vietnam, but it still doesn’t stop me from enjoy good pancakes here and there. I tried many different recipe for pancakes, which usually ended up too dry, not fluffy enough and most time, I ended making so much that it would take me days to finish them, if not, I would give them away. Then one day, I decided to make pancakes on my own make up recipe, I have had read enough recipes to know the main ingredients that pancakes are made of. So I thought I would give it a go, never have I thought it would turn out to be great and it is definitely on my favourite list. I find this recipe is simple, doesn’t require much to prepare and also the fact that I can easily whip up for breakfast instead of a Sunday brunch.

Makes 4-6 pancakes

Ingredients

1 egg

2 tbsp brown sugar

½ cup of self-raising flower

¾ cup of milk

1.     Whisk up egg and sugar until blend together.

2.     Add flour and milk, whisk together

3.     Simply pour the batter in a preheated pancake friendly pan. It is totally up to you to decide how much batter to pour in, it depends on the pancakes size you prefer.

4.     Cook until bubble appears on the surface and simply flip onto the other side, cook further until golden and it’s ready to be enjoy!

Pancakes can be served with various kind of toppings, I like both savoury and sweet pancakes, they both are amazing. For savoury, I’m a sucker for crunchy bacon, sausage as toppings. As for sweet toppings, I love banana top with Greek yogurt. And always finish off with drizzling maple syrup over the top!
